The company is located on the slopes of Mount San Calogero on the north side, in the Sciacca area. The olive grove is made up of around 600 trees of the native Cerasuolo, Biancolilla, Nocellara and Piricuddara varieties. In the olive grove there are ultra-secular trees for at least 70% and for the remainder from 20/30 year old plants.

After harvesting, the olives are transported to the mill in special ventilated containers and pressed after a few hours to keep the organoleptic characteristics of the fresh fruit intact and unaltered.

The oil obtained from Cerasuola, with a robust and decisive character, contains a very high quantity, compared to other cultivars, of phenolic substances, with a high content of antioxidants useful for the health of the human organism.

From Biancolilla, Nocellara and Piricuddara light and delicate oils are obtained which, combined with the characteristics of Cerasuola, give a blend with unique and unmistakable characteristics from an intense and persistent fruity to a balanced and pleasant taste on the palate.

The biophenol derivatives determine the organoleptic characteristics of the oils influencing, for example, the spicy and bitter taste, characteristic of extra virgin olive oil and its fruity aroma.
